Chinese Food and Wine - Wine Food Pairings

Chinese food as a group is hard to pair with wine, because it has a wealth of flavor options. You can have sweet, sour, spicy, bitter, or all four. You can have a dish with seafood, chicken and beef all mixed together. On a buffet plate you could literally have every flavor combination known to mankind (or so it seems) :). You need to identify the primary sauce or seasoning and then pair with that.

Egg rolls, dumplings, salads - Sauvignon Blanc
Chow Mein or light veggie dishes - Chardonnay
Light meat dishes, thick sauces - Pinot Noir
Spicy dishes - Gewurztraminer
