I grew up on Long Island before there were chain stores that had bagels, each community had a local "hot" bage l store where they makde fresh bagels, and a real bagel is much chewier than the chain store ones, they are way too bready. And the only type were plain, onion, garlic, sesame, egg and if the bagel shop was really avant garde cinnamon raisin. None of these new yuppie flavors like assiago cheese or sun dried tomato.
