I'm always hesitant to say "this one wine is the only one you should drink." What if I said "I really love port with cheddar" - and you hate port. Then, even if you tried cheddar and port, you would hate it.
So that being said, I love cheddar and we eat it all the time - either alone or on crackers. It's a cheese we always have a lot of in the fridge. I like it with pretty much every wine. I suppose I like it best with Shiraz and Chianti - reds that are spicy and fruity.
